In the heart of Hutto, there’s a little stand that does more than just serve shaved ice, it serves smiles, stories, and summer memories. For the past five years, Bluebonnets Shaved Ice has been the go-to spot for bold flavors, handmade syrups, and that "ahh, I needed this" kind of refreshment.
Every cup is made with love, right down to the smallest detail. All flavors are handcrafted in-house, ensuring each one is bold, balanced, and bursting with joy. From the water used to the playlist bumping in the background, quality and fun are at the heart of everything they do.

Tell us a little about your business. What do you offer, and what makes it unique?
At Bluebonnets, we serve shaved ice made with love and high-quality ingredients. Every single flavor is handmade by me to make sure it lives up to our standards—bold, balanced, and full of joy.
Quality is at the heart of everything we do, from the water we use to the care we take with every step of the process. Just as important is fun—we want every visit to feel like a mini celebration. Whether it’s a kid getting their favorite after-school treat or a parent taking a moment to breathe, we’re here to brighten their day.
Behind the scenes, we run a tight ship. Operational excellence might sound serious, but to us, it means being prepared, consistent, and creating a smooth, friendly experience from start to finish. We believe kindness is our secret ingredient—and when you mix that with quality, fun, and a team that genuinely cares, you get something truly special.
How did your journey as a business owner begin? What inspired you to get started?
To be totally up front, it started with sadness. I graduated college in 2007, found a job in Florida in my field, and realized... this was not for me. This was so utterly depressing and there was no way to make it better. My boyfriend (now husband) and I went out looking for some comfort food only to realize there were no snowball (shaved ice) stands to be found. Welp, that’s all it took. A few weeks later I had my first shaved ice stand and was booking events!
Jump ahead 10 years and we find ourselves in our Hutto home complete with a kid and dog. Those memories stayed with me – the fun I had with my snowball stand way back when. At this time, my kiddo was in school, my husband was rocking at work, and H-E-B Plus was just opening. Boom! There it was – I knew I would have my stand in front and now, we’re in year 5! I just wanted to build something that made people smile, brought families together, and didn’t require any planning to enjoy. It turns out that when you combine a love of flavors, a sprinkle of creativity, and a stubborn refusal to raise prices for three years, you get a sweet little business that people keep coming back to.
How long have you been in business, and why did you choose Hutto as your home base?
We’ve been proudly serving up shaved ice in Hutto for five summers now. We chose Hutto because it’s got the small-town feel and personality that just draws you in. There’s a real sense of community here—people wave, they cheer each other on, and they know their neighbors. Plus, Hippos! It felt like the perfect place to buy a house and put down roots.
What’s been one of your most memorable moments as a business owner?
Serving our wonderful community over the years has always been great but some have really touched my heart in a special way. These people, who only know me because they are customers, feel so comfortable with me, so cared for, so genuinely safe, that they share with me some of their families' biggest tragedies' and greatest triumphs. In each of their stories we were able to play a positive role; we have made some of their toughest moments a little easier and some of their happy moments even better. It just brings me to tears thinking, how did I get so lucky to be able to bring them this happy place, this joyful memory that helps them through. It’s truly humbling to realize that coming to see me and getting a shaved ice can have such an impact on peoples lives.
What do you think makes the Hutto community special?
Hutto is the kind of place where people still care. People show up for each other. Whether it's local football games, small business events, or a neighbor who just needs a hand, this town has heart. Didn’t we just have a home here built in a week on Extreme Makeover?! How amazing was that! It’s also the only place I’ve seen someone eat three shaved ice cups in a row in 100-degree heat and still ask, “What’s your next best flavor?” That’s commitment—and community.
What advice would you give to someone just starting a business here?
Be kind, focus on your values, know your numbers, and don’t let others' opinions and ideas send you off track. People in Hutto appreciate authenticity and heart. Also, never underestimate the power of good signage and an even better playlist.
When you're not working, where can we find you around town? (Favorite coffee, food, or hangout spots?)
When I’m not working in the trailer, I’ll be working in my office LOL. Now after that, I'll very happily be at Lowes looking for more goodies to fix whatever my next home project is. Casa Jalisco in the Co-op is always great plus getting a malt at Top Notch and chilling outside on the grass is so nice.
Anything exciting coming up you'd like the community to know about?
This summer marks our 5th anniversary, and we’re celebrating all summer! Think giveaways, limited-edition flavors (looking at you, Chantilly), and even a few surprise toppings! We’re also working on making our social media more fun and interactive, so if you ever wanted to be on a shaved ice TikTok, your moment has arrived. As always, we’re just grateful to be part of this incredible community, and we can’t wait to see everyone’s smiling, flavor-stained faces again soon.
